This unique style of forging offers an unpolished rustic finish. With a hardness on the Rockwell scale of 62-63, the inner core of Blue Steel #2 is prized for its high edge retention. The most versatile and one of the most popular knives that a cook can have today is a Santoku knife.

The Santoku knife is a Japanese all-purpose knife with a round tip. The blade is shorter and thinner, making it perfect for home cooking. Santoku literally mean three virtues, and can be used for meat, fish, and vegetables. A lacquered protective wooden sheath called a "Nuri Saya" is included, which protects the knife and adds to its appearance when not in use. Every knife from Yoshihiro is handcrafted by master artisans creating a unique one of a kind work of art. Preparing delicious meals starts with taking wholesome ingredients and using the best tools such as a high quality chefs knife to make every meal into something special. From dicing, slicing, and chopping fresh produce from a farmers market to carving a roast chicken straight from the oven, even the simplest tasks are elevated with a handcrafted knife that is as beautiful as it is functional.



Care & Sharpening: Traditional Japanese knife making values a sharp edge, which requires attention and care. Sharpening and honing should be done with only water whetstones. Hand wash and dry only, and do so immediately if working with acidic ingredients. Do not use on objects such as bones, nutshells, and frozen foods.

after using this knife for quite a while now...i have to say it is by far the best investment i have ever made for my kitchen! i am by no means a professional Chef, but i do enjoy cooking and having a very sharp knife to help with the cutting tasks has made my time in the kitchen even more enjoyable! some may find this a a bit of a negative but i dont care...the blade is not stainless steel, so extra care has to be taken in order to maintain the blade...after every use, and sometimes between items i am cutting, this blade should be washed with nothing more than warm water and if something is sticking to the blade, you should use nothing more than a soft sponge...after washing you should dry the blade with a tea towel or kitchen towel...then using a paper towel, thats what i use and have not noticed anything off about the blade, place a small amount of the supplied oil (or if you so choose, a vegetable oil) and wipe the blade away from you covering the entire knife from the base of the tang to the tip of the blade...being sure to coat the spine as well...wipe any excess off...this knife should past you for the rest of your life and possibly the resto fo your childrens lives provided you take good care of the blade and keep it sharp!

I truly love this knife. I use it every single day. What I find amazing about the knife is the edge retention. I can use it on a whetstone once a month. And hone it with my ceramic rod . And my knife will be razor sharp. This is a knife you HAVE TO TAKE CARE OF. Be careful with anything acidic. (Tomato's, anything citrus, pinapple) Immediately wash your knife. And properly dry. My only complaint would be that my black finish has worn off during time. I plan to purchase more knives from Yoshihiro.
