Details

Preparing delicious meals starts with taking wholesome ingredients and using the best tools such as a high quality chefs knife to make every meal into something special. From dicing, slicing, and chopping fresh produce from a farmers market to carving a roast chicken straight from the oven, even the simplest tasks are elevated with a handcrafted knife that is as beautiful as it is functional.

Our Yoshihiro Ice Hardened Stainless Steel Wa Gyuto Chef Knife is forged with a Western style curved blade that smoothly rocks back and forth with an extended tip for quick chopping.

Our Wa Gyuto is forged from a single piece of ice hardened Aus-8 stainless steel. Ice Hardening is a process where steel is quenched in temperatures below sub zero that helps draw out the hardness of refined steel while infusing it with enough resiliency to perform consistently in the most exacting of conditions. This knife is complimented with a traditional Japanese style handcrafted octagonal natural Shitan Rosewood handle affixed with a double bolster. A protective Lacquered wooden sheath called a Nuri Saya is included, which protects the knife and adds to its appearance when not in use.

This is the best knife for the price. As a professional chef I have owned several high quality name brand knives. They all WILT in comparison to a Yoshihiro knife. It came out of the box with a nice edge. It is a pleasure to work with and I really admire the craftsmanship that was put into making this knife.

I got this knife for my boyfriend who's a sushi chef, and he loves it.!!!!!!! He has a other japanese knives but this has become his go-to knife. Its not a high maintenance knife but is of great quality.He plans on getting other Yoshihiro knives and highly recommends this one to sushi chefs and anyone who likes to work with Japanese knives..

Came out of the box razor sharp and is amazingly nimble for being such a long knife. This is my first Japanese knife and I have to learn to draw it rather than push it, but I have never diced an onion finer nor sliced a tomato thinner than with this. It is very comfortable in the hand and they provide very good instructions on caring for it. I can't wait for my vegetable garden to start producing so that I can really put this knife through its paces.
