Our handmade Yoshihiro Mizu Yaki Aogami Super Blue High Carbon Steel Kurouchi Gyuto Chef knife are unparalleled in their performance. Mizu Yaki is a meticulous process of pure water quenching that draws out the hardness of refined steel while infusing it with enough resiliency to perform consistently in the most exacting of conditions. Exemplifying the most intricate techniques of forging, layering, and hammering, Kurouchi translates as Black Forged and is a traditional Japanese method of crafting high carbon knives that are stain resistant. This unique style of forging offers stain resistance in the form of an unpolished rustic finish. Super Blue High Carbon Steel with a hardness on the Rockwell scale of 64-65 is considered to be the top of its class in high carbon steel metallurgy. It is ranked above Blue Steel #1 and is second to none in hardness and edge retention. It is sandwiched in between stainless steel in the traditional Warikomi style to add to its durability and ease of maintenance. It takes a very high degree of skill to create knives of such exceptional performance and exquisite beauty with a steel of this caliber and is a testament to the extraordinary skill of the artisans. I received my knives within a few days of ordering them and used the once they arrived. They were extremely sharp right out of they box, so sharp my wife was afrade to use them. I've had no issue cutting heavy root vegetables or meat and have had no issues with cleaning or taking proper care of them. they also hold there edge very well. I am extremely pleased with these and recommend them.

Incredibly sharp out of the box, and visually stunning. This knife glides through food with little effort, and I know will only be better once I stone it properly. It has some ever so minor imperfections where the tang and handle meet, which I see as a charming reminder that the blade is shaped by hand, not a machine, though some may find this bothersome. It will certainly discolor some over time, but is a truly beautiful piece of art out of the box. The tiny rust eraser that comes with it actually works, as I tested it on a Wushof carbon steel knife and was able to remove a couple of nasty spots. Overall I am initially very impressed with this knife. It is hard to say it is a "good value" given the hefty price, but in relative terms, I can't imagine being more impressed with a mass produced shun or Kramer in the same range. If you are a chef or avid cook, I highly recommend making this your go to chef's knife.

Where I live they say the best knife is the one you go for every time. This is an absolutely amazing knife, while i can't say its the knife I go for every time as I have different knives for different things, I can most definitely credit this knife for what its worth. The price is on point, the quality cannot be denied even by my chef, who is one of those guys with 1000$ knives, as an excellent blade. I sharpen my own knives as well as many of my co-workers and this is by far easier to sharpen than the VG10 super steel blades are. The maintenance shouldn't be considered a trade off or downside, if your profession is cooking in a real kitchen where you need a real quality blade then you should have the care and passion to wipe a wet blade off and spend 20 seconds at the end of your shift to put a drop of oil on either side and wipe it down.
