Our handmade Yoshihiro Hongasumi knives are crafted with extraordinary skill by our master artisans, creating high-quality knives that are essential in both craftsmanship and performance. Blue Steel #2, with a hardness on the Rockwell scale of 63 to 64, is forged with iron to form stunning mist-like patterns. These knives are meticulously forged and polished with an emphasis on refined craftsmanship, ensuring each piece meets the highest standards of both aesthetics and functionality.
The Yoshihiro Hongasumi knives are complemented with a traditional Japanese-style handcrafted Rosewood handle, which is affixed with a Water Buffalo horn bolster for added durability and beauty. A Saya (protective wooden sheath) is included, providing not only a practical protective solution but also enhancing the knife's appearance when not in use.
The Takobiki is a long slicing knife specifically designed for creating paper-thin slices of fish for sashimi, with its blunt, sharp tip also proving useful for cutting the long tentacles of octopus.
