The Yoshihiro Blue Steel Petty Utility Knife is designed to maneuver through both small and large jobs. Resembling a small chef’s knife, the hardness of this blue steel #2 blade, with 62-63 HRC, gives this blade superior out-of-the-box sharpness, and edge retention. This knife is durable and more forgiving to water exposure thanks to the softer steel cladding surrounding its core. Lightweight and well balanced, this knife is easy to maneuver and control. With its traditional, rustic, black forged finish and handcrafted, rosewood, D-shaped handle, this knife is beautiful and unique. Lightweight and well balanced, this knife comes with a Shitan bolster. A protective wooden sheath called a “Saya” is included, which protects the knife and adds to its appearance when not in use. Every knife from Yoshihiro is handcrafted by master artisans creating a unique one of a kind work of art.
Care & Sharpening:
Traditional Japanese knife making values a sharp edge, which requires attention and care. Sharpening and honing should be done with only water whetstones. Hand wash and dry only, and do so immediately if working with acidic ingredients. Do not use on objects such as bones, nutshells, and frozen foods.
