Scissors & Kiridashi
Traditional Japanese cutting tools for the kitchen, workshop and sewing table. Nigiri hasami are spring-action snips forged from a single piece of steel, used for centuries for thread, string and fine trimming. The kiridashi is a simple single-bevel utility knife used for woodworking, crafts and everyday cutting.
This collection also includes Japanese kitchen shears and the shark skin wasabi grater used by sushi chefs. Many of these tools are made with high-carbon steel cores in the same way as our kitchen knives. See also folding pocket knives.
