Our handmade Yoshihiro Kasumi knives are meticulously crafted by master artisans who bring exceptional performance and value to every blade. Forged from White Steel #2 with a Rockwell hardness of 62, this knife embodies the traditional Japanese art of Kasumi, where the steel is forged with iron to create a stunning mist-like pattern across the blade.
The Deba knife, with its substantial weight and distinctive profile, is specially designed for fileting and butchering whole fish. Its robust blade can cut through the heads and bones of fish, while the smaller, pointed tip allows for precise fileting of flesh from bones. This knife can also be used for poultry and meat, although it is not recommended for cutting through large bones. As one of the most essential traditional Japanese knives, the Deba is a powerful tool for many chefs, transforming even simple tasks into experiences of elegance and functionality.
Each Yoshihiro Kasumi knife is complemented by a handcrafted Magnolia wood handle with a round shape, affixed with a Water Buffalo horn bolster for added durability and balance.
