Product Details

Our handmade Yoshihiro Honyaki knives are crafted with extraordinary skill, forged from the highest quality steel using traditional techniques honed in ancient Japanese sword-making. Each knife is meticulously handcrafted by our master artisans, many with over 50 years of experience. The term Honyaki, meaning "true forged," signifies the pinnacle of Japanese knife craftsmanship, demanding the expertise of seasoned smiths well-versed in the ancient art of sword-making. Each knife is formed from a single piece of White Steel #1, achieving a remarkable Rockwell hardness of 65. The steel is heated in hearths that reach thousands of degrees, quenched in cool water for optimal hardness, and polished to a brilliant mirror finish. This meticulous process results in knives of unparalleled quality, seamlessly blending aesthetic beauty with exceptional performance.

Complementing the exquisite blade, our Yoshihiro Honyaki knives feature a traditional handcrafted premium ebony wood handle, known for its durability and elegance, affixed with a stunning water buffalo horn bolster. Additionally, a protective wooden sheath, called a Saya, is included to safeguard the knife while enhancing its appearance when not in use.

The Yanagi is a long slicing knife specifically designed for creating thin slices of fish for sushi and sashimi, making it an essential tool for many chefs. Its elegant, slender blade allows for smooth, uninterrupted strokes, preserving the integrity and freshness of each ingredient. The Yanagi is slightly heavier, with a wider blade and a thicker spine, providing added stability. The sword tip is designed to balance the knife's weight, making it an excellent choice for chefs with limited workspace. With our handcrafted Yanagi, even the simplest tasks are transformed into culinary masterpieces, combining beauty with functionality in every slice.
