Accessories – All Sharpening Whetstones
Whetstones (toishi) are the traditional and best way to sharpen a Japanese knife. They produce a keener, longer-lasting edge than pull-through or electric sharpeners and remove only as much steel as needed. Start with a #1000 grit stone for regular sharpening, then add a #3000 to #8000 finishing stone for a refined edge. Use a coarse stone of #400 or below to repair chips.
This collection includes every whetstone we carry, both synthetic and natural Japanese stones, along with nagura stones, stone fixers, holders and flattening stones.
