Natural Whetstones
Natural Japanese whetstones (tennen toishi) are quarried stones prized by sharpeners for centuries. A natural finishing stone (shiage) leaves a refined, slightly toothy edge and a beautiful kasumi finish on traditional single-bevel knives, a result many chefs feel synthetic stones cannot quite match.
Each stone is unique, so we list them individually with grades and codes, and the product you see is the stone you receive. Natural stones are best used after a synthetic medium stone and often benefit from a nagura stone to build slurry. See all whetstones.
