Product Details

The Edo Usuba is reminiscent of a small cleaver, featuring a blunt tip that is especially useful for tasks like cutting the eye out of a potato. This knife is hefty enough to chop through tough root vegetables yet precise enough to thinly slice delicate tomatoes. Forged from High Carbon Blue Steel #2 with a HRC 63-64, this Hongasumi style knife boasts superior edge retention and the ability to take on a finer edge compared to Kasumi knives made from White Steel #2.

Our handmade Yoshihiro Hongasumi knives are crafted with extraordinary skill by our master artisans, resulting in knives that are indispensable for both craftsmanship and performance. Blue Steel #2, with a hardness of 63 to 64 on the Rockwell scale, is carefully forged with iron to create stunning mist-like patterns across the blade. The focus is on refined forging and polishing, with the highest attention to detail. Each knife is meticulously crafted to combine both aesthetic beauty and exceptional functionality.

Our Yoshihiro Hongasumi knives come with a traditional Japanese-style handcrafted Rosewood handle and are accompanied by a Saya, a protective wooden sheath that not only protects the blade but also enhances its appearance when not in use.

The Edo Usuba, a traditional Japanese vegetable knife, is fast becoming an essential companion to the popular chef's knife. This knife is highly prized for its ability to handle tasks like chopping through root vegetables and thinly slicing tomatoes. Whether prepping greens for a salad or chopping vegetables for a main dish, the Edo Usuba elevates even the simplest kitchen tasks with its beauty, craftsmanship, and functionality.
