Each Yoshihiro Honyaki knife is meticulously handcrafted, forged from the finest quality steel using the ancient methods of Japanese sword making by artisans with unparalleled skill, some boasting over 50 years of experience. Honyaki represents the pinnacle of Japanese knives, necessitating master knife smiths who are well-versed in the traditional craft. A single piece of White Steel #2 with a hardness rating of 64 on the Rockwell scale is heated in high-temperature hearths, quenched in cool water for hardness, and finished with a brilliant mirror polish. This process creates knives that blend stunning aesthetics with exceptional performance.

Our Yoshihiro Honyaki knives feature a traditional Japanese-style handcrafted premium Ebony wood handle, enhanced with a Water Buffalo horn bolster. A protective wooden sheath known as a Saya is included, safeguarding the knife and adding to its visual appeal when not in use.

The Deba knife is a robust tool specifically designed for filleting and butchering whole fish. Its heft allows for clean cuts through the heads and bones, while the smaller pointed tip efficiently files the flesh away from the bones. Although primarily intended for fish, the Deba knife can also be utilized for chicken and meat; however, it is not recommended for cutting through large bones. As one of the essential traditional Japanese knives, the Deba knife is a powerful component in the repertoire of many chefs. Even the simplest tasks are elevated with a handcrafted knife that is as beautiful as it is functional.
