The hamon, or wave pattern on the blade, has been meticulously designed to reflect the majestic Japanese Fuji Mountain under a full moon. Additionally, the Phoenix motif is elegantly painted using the Fuki Urushi method, a traditional lacquering technique that enhances the knife's artistic value. This piece is not just a tool; it's a unique work of art.
Our handmade Yoshihiro Honyaki knives are the result of extraordinary craftsmanship, forged from the highest quality steel using ancient Japanese sword-making methods honed over generations. The term Honyaki translates to "true forged," representing the pinnacle of Japanese knife craftsmanship, demanding the expertise of seasoned master knife smiths, many of whom boast over 50 years of experience. This knife is made from a single piece of White Steel #1, achieving a remarkable hardness of 66 on the Rockwell scale. The blade is heated in furnaces reaching thousands of degrees, then quenched in cool water to ensure optimal hardness, blending aesthetic beauty with top-tier performance.
The Yanagi is specifically designed for slicing fish into delicate, thin pieces for sushi and sashimi. Its elegant, thin blade allows for long, uninterrupted strokes, preserving the integrity and freshness of the ingredients. As one of the most essential traditional Japanese knives, the Yanagi is a vital tool in the arsenal of many chefs. Elevate even the simplest tasks with this handcrafted knife that seamlessly marries beauty and functionality.
