A good cutting board is the best protection for a sharp Japanese knife. Hard surfaces such as glass, stone and bamboo dull an edge quickly. Softer surfaces let the edge sink in slightly and stay sharp longer.

This collection includes hinoki cypress boards, a traditional Japanese wood that is light, gentle on edges and naturally aromatic, and professional-grade synthetic boards, including Hi-Soft boards and layered peel-off Sekiso boards whose surface can be peeled away to renew it.
