Honyaki Collection
Honyaki, or true forged, knives are the highest expression of Japanese bladesmithing. Each blade is forged from a single piece of steel and differentially hardened under clay, like a Japanese sword. This gives an extremely hard edge, a tougher spine and a visible hamon temper line. Many blades crack during quenching, and only master smiths take on the work.
This collection gathers all our honyaki knives, single- and double-edged, in White Steel, Blue Steel and stain-resistant Inox. Shapes include yanagi, takobiki, deba, usuba, wa gyuto and sujihiki, many mirror-polished with ebony handles and lacquered saya. See also Honyaki White Steel.
