Made in the shorter 7" (180mm) and 8.25" (210mm) lengths, this HAP40 Gyuto has an ocean blue handle and comes with a magnetic oak saya. The compact size is easy to manoeuvre on a small board, and its stainless-clad HAP40 core, heat treated to 66-68 HRC, gives it edge retention well beyond ordinary stainless knives.
HAP40, developed by Hitachi, is highly sought after for its exceptional cutting ability, edge stability, and long-lasting sharpness. While extremely hard, it is easier to sharpen than ZDP-189 due to its lower chromium content. Its hardness delivers outstanding wear resistance and edge retention, though the lower chromium also means it can tarnish more easily if not cared for.
