Product Details

Presenting the Yoshihiro Honyaki Yanagi knife, a stunning knife featuring a beautifully crafted Mt. Fuji hamon, meticulously made by one of the finest Yoshihiro knife masters in Sakai, Japan. The hamon, which shows a beautiful full moon, and a crescent Moon on the reverse side, transforms this knife into a unique work of art. This exceptional piece is a one-of-a-kind creation by Master Ikeda.

Our handmade Yoshihiro Honyaki knives showcase extraordinary skill, forged from the finest steel using traditional methods refined over centuries of Japanese sword making. Each knife is meticulously crafted by master artisans, many with over 50 years of experience, ensuring unparalleled expertise. Honyaki translates to "true forged," symbolizing the pinnacle of Japanese knife craftsmanship. A single piece of White Steel #1 is heated in hearths reaching thousands of degrees before being quenched in cool water, achieving an impressive hardness of 65 on the Rockwell scale. This careful process results in knives of exceptional quality, seamlessly blending aesthetics and performance.

Each Yoshihiro Honyaki knife is complemented by a handcrafted premium ebony wood handle, adorned with a water buffalo horn bolster and triple nickel silver rings. A protective wooden sheath, known as a Saya, is included to safeguard the knife and add elegance when not in use.

The Yanagi is a long slicing knife specifically designed for effortlessly cutting thin slices of fish for sushi and sashimi, making it an indispensable tool for any chef. The beauty of its slender, sharp blade lies in its ability to glide through ingredients with long, uninterrupted strokes, preserving their integrity and freshness. With a slightly heavier, wider blade featuring a thicker spine, the Yanagi's design ensures perfect balance, making it an ideal choice for chefs working in tighter spaces. Elevate even the simplest culinary tasks with this handcrafted knife, combining beauty and functionality.
