How to Remove Rust from Knives
Yoshihiro Cutlery
Even the finest kitchen knives can develop rust over time, especially those made with high-carbon steel. The good news? Light rust isn’t permanent. With the right care, your blade can look and perform like new again.
At Yoshihiro, we believe in helping you maintain your investment. For rust removal, we recommend starting with our Rust Eraser and finishing with Tsubaki Oil to protect the steel from further oxidation.
Why Knives Rust
Rust forms when iron in the steel reacts with moisture and oxygen. High-carbon steels like Blue Steel, White Steel, and others, are more prone to rust, especially if not dried immediately or if exposed to acidic foods such as tomatoes or citrus.
How to Remove Rust with a Rust Eraser
For light surface rust or discoloration, the Rust Eraser is a gentle and effective tool designed specifically for kitchen knives.
Instructions:
- Cover the cutting edge with a towel for safety.
- Using the Rust Eraser dry, gently rub the rusted area in the direction of the blade’s grain (typically lengthwise).
- Wipe away any residue with a clean, dry cloth.
Tip: Focus only on the rusted spots to avoid changing the blade’s finish or geometry.
What If the Rust Is Deep?
If rust has penetrated deeper into the steel, the eraser may not be enough. In these cases, a professional will need to remove a thin layer of steel to restore the blade. This process is time-consuming and best avoided through regular care.
Protect Your Knife with Tsubaki Oil
After cleaning, it’s essential to protect your blade from moisture. Our Tsubaki Oil is food-safe, non-acidic, and ideal for high-carbon steel.
How to Apply:
- Make sure the knife is completely dry.
- Apply a single drop of oil to each side of the blade.
- Spread and lightly buff the oil using a clean microfiber cloth.
- Store the knife in a dry area.

Special Note on Stainless Clad High-Carbon Knives
Many of our high-carbon knives, such as those in the Kurouchi Black Forged Blue Steel series, are clad in stainless steel for easier maintenance. However, the cutting edge is the only exposed part of the core steel and can still rust if not properly dried and oiled.
Even with stainless cladding, vigilance is key. Regularly inspect and dry the edge thoroughly, especially after cutting acidic foods. Apply a thin coat of oil before long storage to prevent rust from forming on the exposed carbon steel edge.

Why Our Tools Beat DIY Rust Removal
Household remedies like lemon juice, vinegar, or baking soda may seem harmless, but they can scratch, etch, or weaken the blade. Our products are purpose-built for fine cutlery. They are gentle, effective, and food-safe.
Everyday Rust Prevention Tips
- Always hand wash and dry immediately after use using a clean cotton towel.
- Avoid dishwashers, which damage both steel and handles.
- Store your knife in a saya sheath cover. Never leave it loose in a drawer.
- Oil high-carbon knives regularly, especially before long storage or in humid climates.
- Use proper sharpening stones and avoid honing rods or pull-through sharpeners.

Rust Removal & Maintenance FAQ
Can I use these products on other knife brands?
Yes. Our Rust Eraser and Tsubaki Oil are safe and effective for use on any high-carbon steel knife, regardless of brand.
How often should I oil my knife?
We recommend applying a light coat of oil after each use if you’re using your knife daily, or at least once a week if stored for longer periods, especially in humid environments.
Can I use these products on stainless steel knives?
While stainless steel is more resistant to rust, these products can still help maintain your knife’s condition, especially if it has a partially exposed carbon edge.
What’s the difference between light rust and deep rust?
Light rust appears as surface discoloration or faint orange spots and can be removed with a Rust Eraser. Deep rust may look pitted or flaky and usually requires professional restoration.
With proper care and attention, your knife can last a lifetime. Treat it with respect, and it will reward you with unmatched performance for years to come.
