Blade Hardness

HRC (Rockwell Hardness) measures how hard the blade's steel is. Kitchen knife steel typically falls in the high-50s to mid-60s on this scale. Harder steel is built to hold a fine edge over long use, while softer steel favors flexibility and easy resharpening. The right HRC depends on the steel and design, not a single higher-is-better number.

Stain Resistant

This steel is not stain resistant. High-carbon steel can rust or develop a patina if not kept dry and cared for, in exchange for the sharper edge it holds.

Saya Cover

This knife comes with its saya cover included at no additional cost, shaped to its exact blade for the same custom fit customers pay extra for on other knives.

Product Details

Our handmade Yoshihiro Kasumi knives are meticulously crafted by our master artisans with exceptional care, creating knives that blend outstanding performance with exceptional value. White Steel #2, with a Rockwell hardness of 62, is forged with iron to form the distinctive mist patterns known as Kasumi, a hallmark of this knife's elegant design and durability.

The Yoshihiro Kasumi knives stand out for their unmatched craftsmanship and superior performance. Each knife is complemented by a traditional Japanese style handcrafted Rosewood (Round) handle with a rosewood bolster, ensuring both beauty and functionality. A protective Saya wooden sheath is also included, safeguarding the blade and enhancing the knife's aesthetic when not in use.

The Deba knife is an essential tool in Japanese kitchens, designed specifically for filleting and butchering whole fish. Its weight and robust construction allow it to cut through fish heads and bones with ease, while its smaller pointed tip enables precise filleting. While it excels at working with fish, the Deba knife can also be used for chicken and meat, although it is not recommended for cutting through large bones. As one of the most indispensable traditional Japanese knives, the Deba knife is a powerful addition to any chef's collection, making even the simplest tasks feel elevated with its exceptional craftsmanship and efficiency.
