Yoshihiro Black Finish Blue Steel #2 Kurouchi Petty Shitan Handle with Magnolia Saya Cover

Description

Kurouchi, meaning Black Forged, is a traditional Japanese technique used to craft high-carbon knives that are stain-resistant. This distinctive forging process creates a rustic, unpolished finish, offering enhanced stain resistance in the areas with the blackened surface while retaining the knife's high-performance edge.

The Yoshihiro Blue Steel Petty Utility Knife is a versatile tool, designed to handle both small and large tasks with ease. Resembling a small chef's knife, this knife features a Blue Steel #2 blade with a hardness of 62-63 HRC, offering exceptional out-of-the-box sharpness and impressive edge retention. The core of the blade is surrounded by softer steel cladding, making it more forgiving to water exposure and less prone to rusting. The knife is lightweight, well-balanced, and easy to maneuver, allowing for precise control during use.

The knife's traditional black forged finish adds a rustic charm, while the handcrafted rosewood D-shaped handle provides a comfortable and secure grip. The knife also features a Shitan bolster for added strength and stability. A Saya cover is included to protect the blade when not in use and enhance its visual appeal. Like all knives from Yoshihiro, this tool is meticulously handcrafted by master artisans, ensuring each piece is a unique work of art.

Traditional Japanese knife care emphasizes maintaining a sharp edge through proper sharpening and honing, which should only be done using water whetstones. To ensure longevity, hand wash and dry immediately after use, especially when working with acidic ingredients. Avoid using this knife on bones, nutshells, or frozen foods to preserve its quality.

For additional protection and storage, we recommend purchasing the Custom-Cut Saya Knife Cover Sheath. Please note that oxidation can occur without proper care, and this knife is best suited for professional use only.
