Our handmade Yoshihiro Left Handed Kasumi knives are crafted by master artisans with the utmost care, delivering high-quality knives that provide exceptional performance and remarkable value. Forged from White Steel #2, which boasts a hardness of 62 on the Rockwell scale, these knives feature beautiful mist patterns known as Kasumi, resulting from the unique forging process that combines iron and steel. The craftsmanship of our Yoshihiro Kasumi knives is truly unparalleled.

Each knife is complemented by a traditional Japanese-style handcrafted Magnolia wood (Round) handle, adorned with a Water Buffalo horn bolster. A protective wooden sheath called a Saya is included, ensuring the knife remains safe and enhancing its appearance when not in use.

Specifically designed for fileting eel, the Edosaki knife features a blade crafted to file from the back to the front. Its short beveled handle fits securely in the palm of your hand, providing excellent control during slippery conditions. The Edosaki is incomparable for delicately filleting, bringing out the sumptuous flavors of eel for exquisite service. With a handcrafted knife that is as beautiful as it is functional, even the simplest tasks in the kitchen are elevated.
