Our handmade Yoshihiro Aonamiuchi Blue Steel knives are crafted with extraordinary skill by our master artisans. Using Aoko Blue Steel #1 with a hardness of 64 on the Rockwell scale, each blade is intricately forged with iron to create the mesmerizing wave-like patterns that define Aonamiuchi. This level of craftsmanship demands a high degree of skill, blending exquisite aesthetics with superior performance. The Namiuchi process, meaning wave forged, results in knives that are both visually striking and highly functional, combining the finest materials with the expertise of traditional Japanese forging techniques.
Our Yoshihiro Aonamiuchi Blue Steel knives are complemented by a traditional Japanese-style handcrafted Ebony wood handle, which provides a comfortable grip and an elegant finish. A protective wooden Saya knife cover is included, adding both beauty and practicality by safeguarding the blade when not in use.
The Mioroshi knife is a longer, sleeker version of the classic Deba knife, offering enough heft to filet whole fish and cut through fish cartilage and bones. Its extended length also makes it versatile enough to serve as an all-purpose knife, ideal for both specialized tasks and general kitchen use. While the Mioroshi is excellent for chicken and meat, it is not recommended for cutting through large bones. Even the simplest of tasks are elevated with a handcrafted knife that is as beautiful as it is functional.
