The Sujihiki-Kiritsuke is a slicer with an angled kiritsuke tip, and this 9.5" (240mm) HAP40 version is a manageable length for home and restaurant use alike. It is made of HAP40 powdered high-speed steel at 66-68 HRC, with an octagonal ebony handle and triple-ring water buffalo horn bolster, and is supplied with a nuri lacquered saya.
HAP40, developed by Hitachi, is highly sought after for its exceptional cutting ability, edge stability, and long-lasting sharpness. While extremely hard, it is easier to sharpen than ZDP-189 due to its lower chromium content. Its hardness delivers outstanding wear resistance and edge retention, though the lower chromium also means it can tarnish more easily if not cared for.
