Product Details

Forged from High Carbon Blue Steel #2 with a hardness rating of 63-64 HRC, the Yoshihiro Hongasumi Kenmuki knife features a traditional single-edged grind, offering superior edge retention and the capability to achieve a finer edge compared to the Kasumi Kenmuki made from White Steel #2. This knife is excellent for intermediate-level chefs and arrives ready to use straight out of the box. Included with the knife are a Magnolia wood sheath, knife oil, and a rust eraser, ensuring it maintains its pristine condition. Each knife is 100% handcrafted in Japan, showcasing a level of artistry not found in mass-produced options.

Our handcrafted Yoshihiro Hongasumi knives exemplify the extraordinary skill of our master artisans, who create high-quality tools that are essential for culinary excellence. The Blue Steel #2, known for its beautiful mist patterns, undergoes meticulous forging and polishing, emphasizing a refined process that highlights the attention to detail in each blade.

Complemented by a traditional Japanese-style handcrafted Magnolia wood handle with a Water Buffalo horn bolster, this knife also comes with a protective wooden sheath called a Saya, which not only safeguards the blade when not in use but also enhances its aesthetic appeal. The Kenmuki knife is designed for smaller precision tasks, allowing chefs to intricately carve and style vegetables and fruits for stunning presentations and garnishes. With this handcrafted knife, even the simplest culinary tasks are transformed into beautiful, functional art.
