Our handmade Yoshihiro Kasumi knives are crafted by master artisans with extraordinary care, creating knives that deliver exceptional performance and outstanding value. Made with White Steel #2, which has a Rockwell hardness of 62, these knives are forged with iron to produce the striking mist-like patterns known as Kasumi, showcasing both beauty and durability.

The Yoshihiro Kasumi knives are unparalleled in craftsmanship and performance. Each knife is complemented by a traditional Japanese style handcrafted Magnolia wood (D-Shaped) handle, affixed with a Water Buffalo horn bolster, ensuring both comfort and aesthetic appeal. The knife comes with a protective wooden sheath called a Saya, which not only protects the blade but also adds to its elegant appearance when not in use.

The Mioroshi knife is a longer, sleeker version of the Deba knife, designed for versatility and power. With enough heft to filet whole fish and cut through cartilage and bones, it also features a longer blade, making it ideal for general-purpose tasks. Though it excels at working with fish, the Mioroshi knife can also be used for chicken and meat, though it is not suitable for cutting through large bones. With its exceptional craftsmanship, this handcrafted knife elevates even the simplest tasks, combining beauty and functionality in a single, powerful tool.
