The Left Handed Deba knife is a robust tool specifically designed for filleting and butchering whole fish. Its substantial heft allows it to easily cut through fish heads and bones, while the smaller pointed tip is perfect for delicately filleting flesh from the bones. Although the Deba knife excels in handling fish, it can also be utilized for chicken and meat; however, it is not recommended for cutting through large bones.
Our handmade Yoshihiro Left Handed Kasumi knives are crafted with exceptional skill by our master artisans, delivering high-quality knives that offer remarkable performance and value. Made from White Steel #2, with a hardness rating of 62-63 on the Rockwell scale, these knives are forged with iron to create the stunning mist patterns known as Kasumi.
Each Yoshihiro Kasumi knife is a testament to unparalleled craftsmanship and performance, complemented by a traditional Japanese-style handcrafted Shitan wood handle designed specifically for left-handed users. The handle is beautifully affixed with a Water Buffalo horn bolster, enhancing both comfort and aesthetics.
