Sushi & Sashimi
Everything you need to prepare sushi and sashimi, from breaking down the fish to the final slice. Start with a deba to fillet whole fish, and use a yanagi or takobiki for slicing sashimi and nigiri toppings. Add the tools sushi chefs rely on: fish bone tweezers, scalers, wasabi graters and plating chopsticks (moribashi).
Traditional single-bevel knives give the cleanest cut, which preserves the texture and shine of raw fish. Keep them at their best with fine-grit whetstones and a wooden saya cover.
